Roasted Breadfruit & Fried Jackfish

Ingredients:

  • 1 large Breadfruit
  • 1 lb Jack Fish
  • lemon juice
  • ¼ cup minced seasoning (onion, chive, garlic, thyme)
  • 1 tbsp salt
  • 1 cup flour for coating
  • oil for frying
Roasted Breadfruit & Fried Jackfish is national food (dish) of St. Vincent & The Grenadines

Instructions:

Preheat oven to 300°F. Pierce the breadfruit with a fork or skewer several times. Bake the Breadfruit for about 1½ hours or until a skewer pushed through the breadfruit comes out clean. Peel and slice the breadfruit. Clean the jack fish. Marinate the fish in the lemon juice for 15 minutes. Remove the fish from the lemon juice, rinse and pat dry. Rub seasoning over fish. Season with salt and pepper. Coat the fish on both sides with flour. Heat oil in frying pan on medium heat until very hot. Fry fish for approximately 4 minutes on each side or until brown.
